Goat Cheese Crostini
Serve when
Set it out with the focaccia the moment the first guests arrive — a reporter reaching for one is your cue.

Theatrical
- 01:04:14 As guests arrive for the feast, Secondo walks a food writer through the spread — 'This is focaccia, which is nice, we make that earlier today' and 'this is a nice crostini... inside is olive oil and goat cheese'
Long before the timpano, the feast starts here — Secondo working the room as the first guests arrive, walking a food writer through a table he and Primo built that morning. He names the pieces one by one, almost shy about it: the focaccia they baked earlier, the crostini split to show the goat cheese and olive oil inside. It's the quietest food in the whole film and the only course a stranger gets a personal introduction to before the night turns into a legend. This is a reconstruction from what's shown and named on screen — the film gives no recipe, only Secondo's proud, simple description.
Ingredients
- For the focaccia:
Method
- For the focaccia: dissolve the yeast in the warm water and let it foam, then mix into the flour, olive oil, and salt until a loose, sticky dough forms. Knead briefly, then let it rise in an oiled bowl for about an hour, until doubled.
- Press the dough out into a well-oiled sheet pan, dimple it all over with your fingers, and let it rise again for 20 minutes. Scatter with flaky salt and rosemary and bake at 425°F for 20–25 minutes until deep gold. Cool, then cut into squares.
- For the crostini: toast the bread slices until golden and crisp at the edges.
- Split each slice open like a little sandwich, or simply spread it thick — either way, the point is a visible seam of goat cheese loosened with a drizzle of olive oil.
- Finish with flaky salt and cracked pepper, and set the tray out alongside the focaccia before the first guests arrive.
