The Rescue Omelette
Serve when
Serve it as the salvaged main course — Mark in an apron, Bridget's kitchen in ruins, dinner rescued: 'blue soup to start, omelette to follow...'
In the movie
Theatrical
- ~01:02:44 With the caper sauce turned to glue and the marmalade standing in for orange sauce, Mark Darcy rolls up his sleeves and cooks — the birthday menu lands as blue soup, omelette, and marmalade, toasted as a triumph.
The omelette is what competence looks like when it stops showing off — Mark quietly turning disaster into dinner. The birthday menu became shorthand for every meal salvaged by the right person showing up.
Ingredients
Method
- Beat the eggs with salt and pepper, two per omelette.
- Foam a knob of butter in a small (8-inch) nonstick pan; pour in a portion of egg.
- Stir to soft curds until the eggs are just set but still glossy on top, fold in herbs (and survivors), and roll onto a plate.
- Repeat for each guest while someone else manages the wine.
- Serve with ceremony disproportionate to the dish. Toast: 'To Bridget — who cannot cook, but who we love. Just as she is.'
Wine pairing
A crisp unoaked Chardonnay (Chablis) — the white the birthday table is already pouring — find a bottle
