Adam names this one first, unprompted, while describing the tasting menu to Helene — the vegetarian course built for a stranger he's inventing on the spot. It's a small, telling detail: even hypothetically, he's building a whole plate around one guest's diet before he's worked out anything else about the meal.

Method
- Beat the ricotta with the olive oil, lemon zest, and a pinch of salt until smooth and spreadable. Spread it across the base of each plate.
- Arrange the asparagus, peas, roasted carrots, and tomatoes over the ricotta, alternating colors and heights rather than lining them up.
- Scatter the torn herbs over the top and finish with a drizzle of good olive oil, flaky salt, and pepper.
- Serve at room temperature — this is a course built to be light, not fussed over.
