- Dissolve the yeast and a pinch of the sugar in the warm milk; let it foam 10 minutes.
- Beat in the rest of the sugar, the egg, and melted butter, then the flour and salt to a soft, sticky dough. Cover and rise 1–2 hours (overnight in the fridge is even better).
- Roll out ½ inch thick on a floured board and cut into squares — no scraps wasted, irregular is authentic.
- Fry in 350°F oil, a few at a time, flipping once, until puffed and deep golden, about 2 minutes a side.
- Drain for seconds only, then bury them — truly bury them — in powdered sugar. Eat hot, and don't wear black.
