- Butter one side of each slice of sourdough. Warm a griddle or heavy pan over medium heat with a film of olive oil.
- Lay both slices buttered-side down. Fry the bread on that one side only, sliding the slices around the griddle so the butter and oil work into a glossy, toasty sheen.
- On the untoasted faces, build the cheese: white and yellow cheddar and Gruyère, with a few shavings of Parmesan over the top.
- Close the sandwich, buttered sides now facing out. Press gently and grill, turning once, until both sides are deep golden and the cheeses have melted into one.
- Cut in half so the cheese pulls, and hand half to your kid.
In the movie
Carl makes this for his son Percy at the flat-top — an unhurried little masterclass in doing one simple thing perfectly. It's the quiet counterpoint to the film's louder food: no critics, no cameras, just a father cooking for his boy.
