- Vianne's signature: hot chocolate spiked with chili pepper, served first to Armande — 'It's an ancient remedy' — and thereafter to half the village as the chocolaterie melts the town's Lenten resolve.
The chili is Vianne's inheritance — the ancient Mayan way with cacao that she carries from town to town with the north wind. One cup converts Armande from crank to co-conspirator; the whole film's rebellion is served warm, in small cups.

Method
- Warm the milk with the chile and cinnamon to a bare simmer; steep 5 minutes and fish out the chile.
- Whisk in the chocolate, cocoa, sugar, and salt until glossy and thick.
- Taste — the chili should arrive late, as warmth rather than heat.
- Serve in small cups. Refuse to accept that anyone doesn't like chocolate; like Vianne, simply find their favorite.
