Chocolaterie Truffles
Serve when
Serve them the Vianne way — guessing each person's favorite before they know it themselves.
In the movie
Theatrical
- The Maya-patterned counter of La Chocolaterie Maya: Vianne spins her plate, divines each villager's favorite, and hand-rolls the truffles and chocolates that scandalize and then save the town during Lent.
Vianne's chocolates are sacraments of pleasure in a town that has outlawed it — each one matched to its person like a prescription. By Easter Sunday even the mayor has surrendered face-first in the shop window, and the sermon is about tolerance.
Ingredients
Method
- Scald the cream — just until it steams and bubbles at the edge — then pour it over the chocolate and butter, rest 2 minutes, stir smooth.
- Divide the ganache and season each portion to a different guess — one spiced, one orange, one coffee.
- Chill 2 hours until scoopable.
- Roll into imperfect spheres (Vianne's are hand-rolled, not machined) and toss in cocoa. Cold hands help — rinse them under cold water, dry, and dust your palms with cocoa so the ganache doesn't melt as you roll.
- Offer them one at a time: "These are your favorite. I'm rarely wrong."
