Substitutions
- Shaoxing wine: dry sherry is the closest common swap; sake works but is less savoury. A splash of chicken stock keeps it alcohol-free.
- Chinese black vinegar (Chinkiang): rice vinegar with a small splash of soy sauce approximates its malty tang; a little balsamic works in a pinch.
