Newton Hawker Satay
Serve when
Serve it off the grill the night they land — Nick's first stop from the airport is the hawker centre, ordering for the table like a homecoming.
In the movie
Theatrical
- 00:19:00 Nick and Colin take Rachel and Peik Lin straight to the Newton hawker centre: a table piled with satay, chili crab, and the whole songbook of Singapore street food — the film reveling in eating like a local.
The hawker scene is the film's real argument about wealth: the best food in a city of billionaires costs a few dollars a stick and is eaten at a plastic table. It's also Singapore's actual pride — hawker culture — given the most loving montage in the film.
Ingredients
- For the marinade:
- For the peanut sauce:
Method
- Marinate the chicken in the lemongrass paste at least 4 hours.
- Simmer the peanut sauce ingredients 10 minutes until thick and pourable.
- Thread the skewers and grill hot and fast, brushing with oil, until charred at the edges and cooked through, about 3-4 minutes a side (165°F at the thickest piece).
- Serve a ridiculous number of sticks with the sauce, cucumber, and onion — hawker portions are a dare.
- Order one of everything else too; the movie does.
