Method
- Salt the turkey inside and out the night before; refrigerate uncovered to dry the skin.
- Work the herb butter under the breast skin; rub the outside with olive oil, salt, and pepper. Tuck the lemon and onion inside.
- Roast at 425°F for 30 minutes, then 350°F, basting occasionally, until the thigh reads 165°F — about 3 hours. (Plan for it to take longer. It always takes longer.)
- Rest at least 30 minutes.
- If everyone has fallen asleep by then, wake them. Say what you're grateful for. Eat at dawn if necessary.
