Method
- Preheat the oven to 425°F. Pat the chicken dry, season the cavity, and stuff it with the lemon, thyme, and garlic.
- Rub the whole bird with softened butter and season the skin well with salt and pepper. Set it on a bed of onion quarters in a roasting pan.
- Roast 20 minutes, then reduce the oven to 375°F and continue roasting until the thigh reads 165°F, about another 50–60 minutes.
- Rest 10 minutes before carving.
