Ingredients

1 ball pizza dough (about 12 oz), room temperature
½ cup crushed tomatoes with a pinch of salt and oregano
8 oz low-moisture mozzarella, shredded — cheese only, wall to wall
Olive oil
No other toppings. This is the whole point.

Method

Heat the oven to its maximum with a steel or stone inside, 45 minutes.
Stretch the dough to a 12-inch round.
Sauce thinly; blanket completely with mozzarella — a cheese pizza has no bare patches and no debates.
Bake 6–8 minutes until blistered and molten.
Eat it entirely alone, in front of a movie you're not allowed to watch, with a giant sundae on deck.
