Method
- Lay the bacon in a cold cast-iron pan and cook over medium heat so the fat renders slowly and the rashers turn thick and crisp.
- Push the bacon aside and crack the eggs into the hot fat.
- Cook them sunny-side up, spooning a little fat over the tops, until the whites are set and the yolks still runny.
- Slide the lot onto plates, straight from the pan, with bread to mop the yolk.
- Best eaten in a warm kitchen with mismatched company — a fire demon optional.
