Method
- Pick all the meat from the crab shell, keeping the lump pieces as intact as you can.
- Lay a half-sheet of nori shiny-side down in your palm.
- Spread a thin layer of sushi rice over the left half of the nori. Keep your fingertips damp — the rice sticks to the nori instead of to you.
- Lay the crab meat, a cucumber baton, and a few scallion pieces diagonally across the rice.
- Roll the nori into a tight cone starting from the bottom left corner, sealing the tip with a few grains of rice.
- Serve immediately, cone side up, with wasabi and soy sauce.
