- Cook and season the sushi rice, then let it cool to room temperature — nigiri rice should never go on the fish while it's warm.
- With a very sharp, single-bevel knife, slice the fish on a slight angle into thin, even rectangles, working in one clean pull rather than a sawing motion.
- Wet your hands, form a small oval of rice in your palm, and press a dab of wasabi onto the top.
- Drape a slice of fish over the rice and press gently to seat it, shaping the nigiri with your fingers as you go.
- Serve immediately with soy sauce on the side for dipping, fish-side down.
