The film opens its morning-prep sequence on exactly this dish: batch after batch of kohada gets tasted and sent back for more time in the vinegar, because the right cure changes with each fish and there's no fixed recipe to fall back on. It's the clearest early demonstration of the standard the whole restaurant runs on — kohada is later named outright as one of the "classic items" that opens Jiro's tasting menu.

Method
- Salt the fillets generously and let them sit 20–30 minutes to draw out moisture, then rinse and pat dry.
- Submerge the fillets in rice vinegar and let them cure — taste as you go. The right time varies by the fish's fat and size, sometimes just 15–20 minutes, sometimes closer to an hour; this is a dish you adjust by tasting, not by the clock.
- Once cured to taste, score the skin lightly in a fine crosshatch so it isn't tough to bite through.
- Shape sushi rice into an oblong mound, dab wasabi underneath, and press a kohada fillet over the top, skin-side up.
