Every good Italian table starts with bread, and Tony's back-alley service is no exception — the breadsticks land with ceremony before the main event. A small dish, but part of why the scene reads as a real restaurant dinner and not just dogs being fed scraps.

Method
- Mix everything into a smooth dough and knead 5 minutes. Rise, covered, about 1 hour, until doubled.
- Divide into 12 pieces and roll each into a thin rope the length of your baking sheet.
- Brush with olive oil and scatter with coarse salt and parmesan.
- Bake at 400°F for 12–15 minutes until golden and crisp.
- Serve standing in a glass, if you're feeling like the best table out back.
