Chiles en nogada closes the story the same way the quail in rose petal sauce opened its middle: with a dish whose effect on the room is instant and unmistakable. Nobody identifies the mechanism, but nobody has to — a wedding guest asks for the recipe mid-bite, calls it heavenly, and within minutes the party is pairing off with an urgency the dish clearly caused. It's the film's last and largest demonstration of its whole premise: what Tita cooks, everyone at the table feels.

- For the walnut sauce (nogada):
Method
- Roast the poblanos directly over a flame or under a broiler until blistered all over, then steam in a covered bowl 10 minutes and peel. Slit each lengthwise and remove the seeds, keeping the chile whole.
- Brown the pork and beef with the onion and garlic. Add the tomatoes, fruit, raisins, almonds, plantain, and cinnamon, and simmer until the mixture is thick and the fruit has softened, about 20 minutes. Season with salt.
- Stuff each chile generously with the picadillo filling.
- For the sauce, blend the peeled walnuts, queso fresco, crema, and sugar until completely smooth, thinning with a little milk if needed. Chill until ready to serve.
- Nap each stuffed chile with the cold walnut sauce and scatter with pomegranate seeds and parsley — the dish's colors are meant to echo the Mexican flag.
Substitutions
- Fresh walnuts: peeling fresh walnuts (to lose their bitter skins) is the traditional step but genuinely laborious; well-shelled walnuts blanched briefly and rubbed in a towel get most of the way there.
- Queso fresco: a mild farmer's cheese or a mix of cream cheese and a little sour cream approximates its tang.
