Mario's Blind-Tasting Soup

- ~01:22:30 Mario blindfolds Martha and feeds her spoonfuls of a soup he's made specially, daring her to name every ingredient by taste alone — a chef stripped of the one sense she trusts most, her sight.
The blindfold is the whole scene: Mario doesn't win Martha over with a showstopper, he disarms her by taking away the one sense — sight — she uses to control everything else in her kitchen. She has to trust her palate, and by extension him, or admit she can't.

Method
- Sweat the onion, carrot, celery, and garlic in olive oil over medium-low heat until soft and fragrant but not browned, about 10 minutes.
- Add the stock, rosemary, and bay leaf, and bring to a gentle simmer.
- Stir in the pasta or potato and cook until tender, 10–15 minutes depending on which you use.
- Season carefully — this soup has to carry its own flavor without visual cues, so taste and adjust more than you normally would.
- Finish each bowl with a thread of good olive oil and serve it warm, not scalding — a blindfolded taster needs a temperature they can trust.
