It's one of the only moments in the film where Martha's kitchen gets an unqualified win — no sent-back plate, no lecture, just a compliment relayed secondhand through the pass. She barely lets herself enjoy it before she's back to the next ticket.

Method
- Pat the quail dry and season generously inside and out with salt and pepper. Tuck a little softened butter and a few thyme leaves under the skin of each breast.
- Sear the quail breast-side down in a hot ovenproof pan until deeply golden, then flip and transfer to a 425°F oven for 8–10 minutes, until just cooked through — the breast should read 165°F and the juices run clear.
- Rest the quail on a warm plate while you build the sauce in the same pan: soften the shallot, deglaze with the white wine, and reduce by half.
- Add the stock and reduce again to a light glaze, then swirl in the cold butter off the heat to finish it glossy.
- Plate the quail whole or halved, spoon the sauce around, and serve hot — this is a dish that wants to move fast from pan to table.
