Method
- Preheat the oven to 350°F and grease two 8-inch cake pans. Whisk the flour, sugar, and baking powder together.
- In a separate bowl, whisk the eggs, milk, oil, and vanilla. Combine with the dry ingredients until just smooth.
- Divide between the pans and bake 25–30 minutes, until a toothpick comes out clean. Cool completely.
- Whip the cream with the powdered sugar and vanilla to stiff peaks — chill the bowl and beaters first; cold cream whips faster and holds its shape longer. Fill and frost the cooled cake layers.
- Decorate with fresh berries and chill until serving.
