Method

Sauté the (store-bought, benign) mushrooms in half the butter until golden; season. Give them room in the pan — crowded mushrooms steam grey instead of browning.
Beat the eggs; melt the remaining butter until foaming.
Cook the eggs to soft folds, mushrooms tucked in at the center.
Roll onto a warmed plate.
Serve with a glass of water and unwavering eye contact. Do not improvise the mushrooms.
