Method
- Beat the eggs with a pinch of salt until fully blended.
- Melt the butter in a nonstick pan over medium heat until it foams.
- Pour in the eggs and stir gently with a fork, shaking the pan, until softly set but still glossy.
- Scatter the cheese and chives down the center, fold, and roll onto a warm plate, seam-side down.
- Season, and serve to someone who sheltered you from the rain.
