Ingredients

3 eggs
1 tablespoon butter
Salt and pepper
Fresh chives, snipped
A little grated cheese (Remy would approve of Comté)

Method

Beat the eggs with a pinch of salt until fully blended.
Melt the butter in a nonstick pan over medium heat until it foams.
Pour in the eggs and stir gently with a fork, shaking the pan, until softly set but still glossy.
Scatter the cheese and chives down the center, fold, and roll onto a warm plate, seam-side down.
Season, and serve to someone who sheltered you from the rain.
