Method
- Boil the macaroni just shy of al dente.
- Make a sauce: butter and flour, then milk, whisked thick; melt in the cheeses off the heat.
- Temper the eggs into the sauce (this is what makes it sliceable, church-supper style), season, and fold in the macaroni.
- Pour into a buttered dish, cap with the reserved cheddar and a dust of paprika.
- Bake at 350°F for 30–35 minutes until burnished and bubbling at the edges. The corners belong to whoever set the table.
