The dying-housewife vignette is Tampopo at its most unsentimental about food and love: a husband, panicked, orders his sick wife to get up and cook rather than let her slip away, and she does — one last pan of fried rice, made for a family that will eat it while she's still in the room. It's a small, plain dish next to the film's ramen quest, and that's the point: the movie insists a family's last meal together doesn't need to be a masterpiece to be the one that matters most.

Ingredients

4 cups cooked rice, cold (day-old is best)
2 tablespoons neutral oil
2 eggs, beaten
1/2 cup diced ham or char siu
1/2 cup frozen peas and carrots
2 scallions, sliced
2 tablespoons soy sauce
Salt and white pepper

Method

Heat the oil in a hot wok or large skillet until shimmering.
Pour in the eggs and scramble quickly to soft curds; push to one side.
Add the ham and peas and carrots, then the cold rice, breaking up clumps with the spatula and tossing everything together over high heat.
Season with soy sauce, salt, and white pepper; fold the eggs back through.
Finish with scallions and serve immediately, straight from the pan to the table.
