A truck driver in a cowboy hat teaches a widowed noodle cook to make the perfect bowl — the "ramen western" that made food cinema a genre. The final bowl is graded the only way that matters: every customer drinks it dry.

Method
- Warm the bowls — the master's first lesson is respect for the bowl's temperature.
- Season each bowl with tare, then ladle in the hot broth.
- Boil the noodles precisely and drain hard; a watery noodle dilutes the work.
- Fan the noodles into the broth; arrange chashu, egg, menma, scallions, and nori with intent — the toppings' geography matters.
- Before eating, observe the bowl. Caress the chashu with your chopsticks. Apologize to the pork: 'See you soon.' Then begin. (This is the canonical procedure.)
Substitutions
- Dashi (in the tare): instant dashi powder, or kombu steeped in hot water; light chicken broth at a pinch.
- Mirin: sake with a little sugar, or rice vinegar with sugar without the alcohol.
