Method

Halve the eggs lengthwise and pop the yolks into a bowl. Week-old eggs, plunged into ice water straight after boiling, give up their shells far more politely than farm-fresh ones.
Mash the yolks with the mayonnaise, mustard, relish, salt, and pepper until smooth.
Pipe or spoon the filling back into the whites, mounding it high.
Dust every single one with paprika before it leaves the kitchen.
Arrange on a tray and refrigerate until serving.
