Ingredients

1 chicken, cut in 8 pieces
2 cups buttermilk
2 cups flour, seasoned hard with 2 teaspoons salt
1 teaspoon black pepper
1 teaspoon paprika
½ teaspoon cayenne
Crisco — per Minny, non-negotiable

Method

Soak the chicken in buttermilk a few hours.
Melt enough Crisco in a cast-iron skillet for a half-inch depth; bring to 325°F.
Dredge the chicken in the seasoned flour, pressing the crust on.
Fry in batches, turning once, 12–14 minutes to deep golden and cooked through — 165°F at the bone on a thermometer.
