- Soak the chicken in buttermilk a few hours.
- Melt enough Crisco in a cast-iron skillet for a half-inch depth; bring to 325°F.
- Dredge the chicken in the seasoned flour, pressing the crust on.
- Fry in batches, turning once, 12–14 minutes to deep golden and cooked through — 165°F at the bone on a thermometer.
- Rest on a rack. Feel better about life — that's the recipe working.
