Hassan's father built his whole argument for the family staying in France on classical technique versus his own household's secret spices — so it's a nice bit of narrative irony that the film's clearest proof of Hassan's talent is a dish that folds one into the other without asking permission. His family tastes it, loves it, and can't quite name what's different, until Hassan does it for them: not a compromise between two cuisines, but a boeuf bourguignon that is unmistakably his. It's the same idea that gets him hired across the road, in miniature, cooked for people who love him rather than for a critic.

- Brown the lardons, then the beef in batches in the same fat, until each piece has a real crust. Set aside with the bacon. Pat the beef bone-dry with paper towels before it hits the pot — wet cubes steam grey instead of crusting.
- Brown the onion and carrots in the same pot. Return the beef and bacon, sprinkle with flour, and toss to coat.
- Stir in the wine and enough stock to just cover, then the garlic, tomato paste, bay leaf — and here's the twist — the garam masala, cumin, and Kashmiri chili powder, stirred in with the rest of the aromatics rather than added at the end.
- Cover and braise at 325°F for 2½–3 hours, until the beef is fork-tender.
- Fold in the braised pearl onions and sautéed mushrooms, adjust the seasoning, and serve — a dish that reads as classic Burgundy from across the room and only announces its second half once it's in your mouth.
