The film introduces this dish twice, and the gap between the two says everything. First it's just background noise — a cooking show playing while Ila works in her kitchen, teaching the "all-time favorite" recipe. Later, once she's decided to keep sending lunch to the stranger who's actually eating it, she names the same dish outright in a letter: her husband's favorite, sent to someone else on purpose. It's the moment Ila's cooking stops being a chore aimed at saving her marriage and starts being something she's doing for herself.

- Lightly pan-fry the paneer cubes in a little oil until just golden on the edges, then set aside. If the fried cubes firm up while they wait, a 10-minute soak in warm salted water brings them back to pillowy-soft.
- In the same pan, temper the cumin seeds, then cook the finely chopped onion until golden. Add the ginger-garlic paste and cook a minute more.
- Stir in the turmeric, coriander, chili powder, and pureed tomato; cook until the oil separates from the masala.
- Add the onion petals and bell pepper squares and cook briefly so they stay a little crisp — the "do pyaza" ("double onion") style keeps one onion soft in the base and one fresh through the dish.
- Fold in the paneer and garam masala, season with salt, and simmer just long enough to warm through. Finish with cilantro.
