Method
- Warm a clear glass teapot with a little hot water, then tip it out.
- Add the wild bergamot and red clover blossoms to the pot — part of the point is seeing the flowers suspended in the water.
- Pour over water that's just off the boil (herbal blossoms scorch at a hard boil) and steep 5-7 minutes, until the tea turns pale gold and smells of citrus and hay-sweet clover.
- Pour through the spout into small cups, leaving the blossoms behind. Offer honey, but it's lovely clean.
Substitutions
- Wild bergamot is bee balm (Monarda), not the bergamot orange in Earl Grey — but if foraged bee balm isn't available, a good Earl Grey plus a few dried chamomile or linden flowers gives you the same citrus-and-meadow character in the cup.
- Red clover blossoms are common as a herbal tea; dried rose or hibiscus adds a similar floral color and softness if you can't find clover.
