Method
- A day ahead, line a sieve with cheesecloth, spoon in the yogurt, and let it drain overnight in the fridge. Keep the thin, tangy whey that collects — that's what you're plating (the thick yogurt is a cook's bonus for another day).
- Rehydrate the kombu in a little cool water for 20 minutes until supple, then slice into fine ribbons. Save a spoonful of the soaking water for its clean sea flavor.
- Whisk the umeboshi paste, rice vinegar, mirin, and oil into a bright, salty-sour dressing.
- Gently fold the picked crab with just enough umeboshi dressing to coat — keep the lumps intact and the seasoning restrained; the crab should still taste of crab.
- Plate: pool a little yogurt whey and kombu water in a shallow bowl, mound the dressed crab in the center, drape the kelp ribbons over, and finish with dill and, if you like, a few cucumber ribbons.
Substitutions
- Dungeness crab: any sweet, fresh lump crab — blue crab, peekytoe, or good picked king crab — stands in honestly; avoid anything watery or imitation.
- Umeboshi: if pickled plum is hard to find, a little white miso brightened with extra rice vinegar and a pinch of salt gives you the same salty-sour backbone.
