- Warm the yolks and sugar over a bain-marie, whisking, until ribboned and an instant-read thermometer reads 160°F (that makes the yolks safe); whisk into the melted chocolate with the vanilla and salt.
- Loosen with the unwhipped cream, then fold in the whipped cream in thirds — gently; this pie is all air and feelings.
- Cloud into the crust and chill 4 hours.
- Finish with chocolate curls.
