Method
- Make the choux: bring the water, milk, and butter to a boil, beat in the flour to a smooth paste, cook it out a minute, then beat in the eggs one at a time until glossy and pipeable.
- Pipe into 5-inch logs and bake at 425°F for 10 minutes, then drop the heat to 375°F for a further 15–20 minutes, until deep golden and hollow. No peeking for the first 20 minutes, or they deflate. Cool completely.
- For the crème, whisk the yolks, sugar, and cornstarch, temper in the hot vanilla milk, and cook to a thick custard. Beat in the butter and chill under plastic.
- Split or pierce the éclairs and pipe them full of crème.
- Warm the cream, pour over the chocolate for a smooth glaze, and dip the tops. Set, then serve — regrowth not included.
Substitutions
- Vanilla bean: vanilla bean paste or 2 teaspoons of extract in the crème work fine — the whole bean is a luxury, not a requirement.
