Bake and chill the tart shell and lemon cream well ahead. The 'drop' — smashing the tart deliberately on the plate — happens right at serving, as Bottura tells the story of his sous chef's accident.
PrepThe shortbread base, lemon cream, and meringue shards can all be made a day ahead. Assembly at the table is quick and intentionally rough.

Some of the most technical dishes here are genuinely restaurant-only. Grant Achatz's Black Truffle Explosion depends on a spherification technique refined over years in a professional kitchen; the reconstructed recipe here is an honest home approximation with a simple gelatin filling, not a claim to reproduce Alinea's exact method.
This catalogue covers a representative slice of the show, not every episode. Chef's Table has profiled dozens of chefs across seven volumes plus spin-offs (France, Pastry, BBQ, Pizza, Noodles, Legends). The entries here span Volumes 1, 2, 3, and 7 — a deliberate spread from the show's 2015 debut through its most recent 2024 season — chosen for dishes with enough on-screen detail to reconstruct honestly, not as a ranking of the "best" episodes.
Many chefs' full tasting menus run to a dozen-plus courses. Episodes typically show several dishes in passing beyond the one or two given full recipes here — a sauce, a garnish, a component shown only briefly in a kitchen montage without enough detail to reconstruct honestly. Those stay uncatalogued rather than guessed at.
