Ingredients
Method
- Whip the mascarpone, chestnut purée, and sugar together until smooth and well combined.
- In a separate bowl, whip the heavy cream to soft peaks, then fold it into the chestnut-mascarpone mixture to lighten it.
- Combine the coffee with the rum or liqueur, if using, in a shallow dish.
- Dip each ladyfinger briefly in the coffee — just enough to soak, not so long it falls apart — and layer them in a dish.
- Spread a layer of the chestnut cream over the soaked ladyfingers, then repeat with a second layer of each.
- Chill for at least 4 hours, dust with cocoa powder just before serving, and top with candied chestnut pieces.
Substitutions
- Chestnut purée: sold sweetened in cans or jars around the holidays; unsweetened purée works too, just add a little extra sugar to the cream mixture.
- Ladyfingers: store-bought is completely standard even in professional kitchens — no need to make your own.
