The contestant frames his whole dish around a precise ratio of seasonings, and the show lets that framing do the work — mapo tofu is a dish every judge has eaten a hundred times, so getting the balance exactly right, rather than reinventing it, is the entire argument.

Method
- Simmer the tofu cubes gently in lightly salted water for 2 minutes to firm them up, then drain carefully.
- Heat the oil in a wok, brown the pork until it renders some fat, then push it aside and fry the doubanjiang, black beans, garlic, ginger, and scallion whites until fragrant and the oil turns red.
- Add the stock and bring to a simmer, then gently slide in the tofu and simmer for 3 to 4 minutes without stirring hard.
- Stir in the cornstarch slurry a little at a time until the sauce thickens enough to coat the tofu without breaking it.
- Finish with the ground Sichuan peppercorn and scallion greens, and serve immediately over rice.
Substitutions
- Doubanjiang: a Sichuan specialty paste — look for it at an Asian grocer; in a pinch, a mix of miso and chili-garlic sauce approximates the funk and heat.
- Sichuan peppercorn: essential to the dish's numbing "má" quality; there isn't a good substitute, so seek it out rather than skip it.
