Method
- Bring a large pot of well-salted water to a boil and cook the spaghetti until just shy of al dente.
- Meanwhile, warm the olive oil in a wide pan over low heat, add the garlic, and cook slowly until pale gold and fragrant — never browned bitter.
- Add the red pepper flakes and a splash of the pasta water to stop the garlic from cooking further.
- Lift the pasta directly into the pan with tongs, add more pasta water a little at a time, and toss vigorously over medium heat until the sauce clings and emulsifies.
- Finish with the parsley, taste for salt, and serve immediately.
