Bibimbap is one of Korea's most democratic dishes — built to use up whatever vegetables are on hand — and topping it with tuna and caviar is a deliberate provocation: proving a home-style bowl can carry the most expensive ingredients on the show without losing what makes it bibimbap.
Ingredients
Method
- Toss the warm rice with a little sesame oil and divide among bowls.
- Arrange the carrot, spinach, and bean sprouts in separate mounds around the rice.
- Sear the tuna briefly on all sides in a very hot pan, leaving the center rare, then slice and fan it over the top, or lay it raw if you prefer sashimi-style.
- Whisk the gochujang, rice vinegar, and sugar into a quick sauce and drizzle it over the bowl.
- Top with the caviar (and an egg yolk, if using) and bring to the table before mixing, so the caviar is the last thing stirred through.
Substitutions
- Caviar: any good roe — trout roe or salmon roe (ikura) — gives a similar briny pop at a much lower cost than sturgeon caviar.
