Method
- Mix flour, warm water, yeast, honey, salt, and olive oil until a shaggy dough forms.
- Knead until smooth, about 8 minutes by hand or 5 minutes in a mixer. Cover and let rise until doubled.
- Divide off small pieces for ears, snout, and legs. Shape the main dough into a flattened wolf body and attach the smaller pieces with a little water.
- Let rise 20 to 30 minutes while the oven heats to 400 F.
- Brush with beaten egg, sprinkle with coarse salt, and bake until deeply golden and the loaf sounds hollow when tapped on the bottom, 22 to 28 minutes.
Substitutions
- Bread flour: All-purpose flour works, but the loaf will be a little softer and less chewy. Add an extra tablespoon of flour if the dough feels sticky.
- Instant yeast: Active dry yeast is fine. Bloom it in the warm water with the honey for 5 minutes before mixing.
- Honey: Use sugar or maple syrup. The sweetness is there to feed the yeast and help the crust brown.
- Shaping: Make small rolls stamped with a knife slash if a full wolf shape feels fussy. The point is handmade bread from Hot Pie, not bakery sculpture.
