Lemon cakes are the cleanest hand food on the table: small, bright, and courtly. Put them at the end so the feast moves from bread and meat to something King's Landing would pretend is delicate.

Sansa's lemon cakes are about aspiration as much as dessert. They taste like the courtly life she imagined before King's Landing taught her what courts cost.
Ingredients
Method
- Heat oven to 350 F. Grease a mini muffin pan or small cake molds.
- Whisk flour, baking powder, and salt.
- Beat butter and sugar until fluffy. Beat in eggs, lemon zest, and lemon juice.
- Add flour mixture and milk in alternating additions.
- Spoon into the pan and bake until golden at the edges and a toothpick comes out clean, 12 to 16 minutes.
- Mix powdered sugar with lemon juice and spoon over cooled cakes.
Substitutions
- Mini muffin pan: Use a regular muffin pan and make fewer cakes, or bake in an 8 inch square pan and cut into small hand-held squares.
- Fresh lemons: Bottled lemon juice works for the glaze, but use fresh zest if possible. The zest gives most of the aroma.
- Milk: Buttermilk makes the cakes softer and tangier. Non-dairy milk works too.
- Butter: Neutral oil can substitute for a softer, simpler cake, though it loses some courtly richness.
