Season two opens with Hannibal cooking a formal, course-by-course dinner for Jack, who is mourning Will. The show uses the show's most restrained, most Japanese-inflected cooking of the whole series here — small, precise plates instead of a big roast — to underline how controlled and deliberate Hannibal is being with a man he's actively managing through grief.

Method
- Score the squid bodies in a fine crosshatch, then blanch briefly in boiling water until they curl and turn opaque, about 15 seconds. Shock in ice water and pat dry.
- Lay a sheet of nori on a bamboo mat, spread a thin layer of seasoned sushi rice over it, and lay the blanched squid on top. Roll tightly and slice into rounds.
- Arrange the squid rolls on a small serving plate.
- Present the sea urchin roe directly on its half-shell if available, or in a small dish set on ice, alongside the rolls.
- Garnish with shiso leaves and serve immediately with a small dish of soy sauce for dipping.
Substitutions
- Sea urchin: This dish is honest about needing the real ingredient — there isn't a good substitute for uni's texture. Order it fresh and use it the day you buy it.
- Squid: Cuttlefish rolls the same way if squid isn't available.
