Punch Romaine has a history that predates the show by more than a century — a real 19th-century punch famous for being served on the Titanic's last dinner menu — and Hannibal's version leans into that old-world formality during his Florence chapter. It's one of the few drinks in the show's run that's entirely what it appears to be: a genuinely elegant, citrus-forward palate cleanser.
Ingredients
Method
- Spoon the lemon sorbet into chilled coupe glasses, filling each about a third full.
- Combine the champagne, rum, and absinthe in a small pitcher.
- Pour the mixture slowly over the sorbet in each glass — it will foam up, so pour in stages.
- Stir gently just once to combine without fully melting the sorbet.
- Garnish with a lemon twist and serve immediately, while the sorbet is still half-frozen.
Substitutions
- Absinthe: A splash of anise liqueur (Pernod, Herbsaint) gives the same licorice-forward note without needing a bottle of absinthe on hand.
