By this stretch of the season, Hannibal's cooking has become almost a second language between him and the people watching him closely — a technically ambitious dish folded into an ordinary breakfast course. The Sacromonte omelette, styled by the show's food team after the traditional Spanish original, is one of the few dishes here that's a real, named, historical recipe rather than an invention built around a joke.

Method
- If using sweetbreads, blanch them in simmering water for 3 minutes, then dice small once cooled. If substituting mushrooms, dice them the same size.
- Sauté the sweetbreads (or mushrooms), bell pepper, and ham in olive oil over medium heat until everything is cooked through and lightly browned, about 6 minutes.
- Whisk the eggs with a pinch of salt and pour them over the filling in the pan, tilting to let the eggs spread evenly.
- Cook until mostly set but still a little loose on top, then fold the omelette in half and press gently.
- Slide onto a plate and serve immediately.
Substitutions
- Sweetbreads: Diced mushrooms give a similar rich, savory bite without the specialty ingredient and cook much faster.
