The Bombay Sandwich is street food built for volume and speed — vegetables pressed between buttered white bread and griddled hard enough to hold together in one hand — and it's exactly the kind of unpretentious, everyday dish Kavi Thakrar wants Phil to experience alongside Mumbai's more elaborate specialties.
Ingredients
Method
- Spread green chutney generously on one side of each slice of bread.
- Layer potato, tomato, cucumber, onion, and beet between two chutney-spread slices, seasoning each layer lightly with chaat masala as you go.
- Butter the outside of the sandwich generously, then press it on a hot griddle or in a sandwich press.
- Open the sandwich partway through pressing, pile shredded cheese over the vegetables, and close it back up so the cheese melts as the outside crisps.
- Press until deeply golden on both sides and the cheese has fully melted, then cut into triangles and serve immediately.
Substitutions
- Processed cheese: Mumbai's classic cheese sandwich uses a mild, meltable processed cheese similar to American cheese; a mild Cheddar or Monterey Jack is a good supermarket substitute.
- Green chutney: A mix of blended cilantro, mint, green chili, and lime juice makes an easy fresh substitute if a jarred version isn't on hand.
