Pimiento Cheese and Fried Green Tomato Biscuits

The Loveless Café has been serving Southern breakfast just outside Nashville since the 1950s, and biscuits are the whole reason for its reputation. Building one around pimiento cheese and fried green tomato turns a simple bread into a full, composed Southern breakfast in a single bite.

Method
- For the biscuits, whisk the flour, baking powder, baking soda, and salt, then cut in the cold butter until the mixture looks like coarse crumbs. Stir in the buttermilk just until it comes together, pat out, and cut into rounds. Punch the cutter straight down without twisting — a twist seals the edges and the biscuits won't rise tall. Bake at 450 F until tall and golden, about 12 to 15 minutes.
- For the pimiento cheese, stir together the Cheddar, mayonnaise, pimientos, and cayenne until well combined. Chill until ready to use.
- For the fried green tomatoes, dip the tomato slices in buttermilk, then dredge in seasoned cornmeal. Fry in oil until golden and crisp on both sides, about 2 minutes per side.
- Split the warm biscuits, spread with pimiento cheese so it starts to soften, and tuck a fried green tomato slice inside each one.
Substitutions
- Pimientos: Roasted red peppers, finely diced, are a close substitute if jarred pimientos aren't sold locally.
- Green tomatoes: A firm, underripe red tomato works in a pinch, though it will be sweeter and softer than a true green tomato.
