Boat noodles are the very first bite of the very first episode — Phil eating from a vendor working out of an actual boat at a floating market, a small bowl built for speed and volume rather than ceremony. It sets the tone for the whole series: food that matters isn't always found in a dining room.
Ingredients
Method
- Mix the ground beef with the baking powder and a pinch of salt, then roll into small meatballs. Poach in simmering water until firm and cooked through, about 5 minutes.
- Simmer the beef stock with dark soy, fish sauce, palm sugar, cinnamon, star anise, and garlic for 20 minutes to build a deeply savory, slightly sweet broth. Strain out the whole spices.
- Blanch the rice noodles in boiling water until just tender, then divide between bowls.
- Add the thin beef slices and meatballs to the hot broth just long enough to cook the raw beef through — under a minute for paper-thin slices, until no pink remains — then ladle everything over the noodles.
- Top with bean sprouts and Chinese celery, and pass fried garlic, chili flakes, and lime at the table.
Substitutions
- Beef stock base: A proper boat noodle broth traditionally includes pork blood for color and body. This version leaves it out for accessibility — dark soy and a longer simmer get most of the way to the same deep color and richness.
- Palm sugar: Light brown sugar is a fine substitute if palm sugar isn't available.
