Hosting notes
This is the no-stress opening course. Build the platter before guests arrive, cover it, and refrigerate it. Pull it out 20 minutes before serving so the cheese and cured meats are not fridge-cold.

Ingredients
Method
- Arrange the soppressata, capicola, provolone, mozzarella, artichokes, peppers, giardiniera, and olives on a large platter.
- Toss the greens lightly with olive oil, red wine vinegar, oregano, salt, and pepper. Tuck them onto the platter or serve in a separate bowl.
- Add sliced bread and let people build bites at the table.
Substitutions
- Capicola: Use prosciutto, mortadella, salami, or a good deli ham. Capicola brings heat and porky richness, so add a few pickled hot peppers if your substitute is mild.
- Soppressata: Any dry salami works. For a lighter board, use roasted turkey and keep the Italian-American feeling with provolone, oregano, and pickled vegetables.
- Giardiniera: Pepperoncini, banana peppers, or chopped pickles all provide the same acidic snap. If using plain pickles, add a pinch of oregano and chili flakes.
- Fresh mozzarella: Low-moisture mozzarella is less lush but easier to slice and cheaper. Cube it and dress it with olive oil, salt, and dried oregano.
