Wilderness Venison Roast
Serve when
Serve simply carved off the fire — no plating, just hungry teenagers passing pieces of meat around.
In the series
Season 1
- S1E4 · ~00:40:00 After Natalie shoots a deer with Ben Scott's rifle, the survivors butcher and roast it over the fire outside the cabin and eat as a group for the first time since the crash
In the series
This is the clearest, most straightforward meal the stranded team eats in the entire series — a real hunted animal, killed with a real rifle, butchered and cooked over an open fire because Coach Ben allows it. It marks the moment survival stops being theoretical: after this, meat is something they actively go out and take, not something that's rationed from a crash-site pantry.
Ingredients
Method
- Season the venison well with salt and pepper on all sides.
- Sear the roast over high, direct heat until well browned on all sides — a cast-iron pan set right at a fire's edge gets close to the original scene's conditions.
- Move the roast to lower, indirect heat, add the garlic, rosemary, and a splash of water or stock to the pan, and cover loosely.
- Cook slowly, turning occasionally, until the internal temperature reaches about 135 F for medium-rare — venison is lean and overcooks fast, so check it early.
- Rest for 10 minutes, then carve into rough slices or simply pull it apart by hand and serve straight from the pan.
Substitutions
- Venison: Lean beef or bison roast is the closest supermarket substitute — sear hot and hard, and don't cook past medium, since both are lean cuts that dry out quickly.
- Fresh rosemary: A teaspoon of dried rosemary works if fresh isn't on hand.
