Bubba's recitation is the most famous menu in film — a poem of shrimp delivered in the rain. Forrest keeps the promise, buys the boat, and the shrimp company becomes the movie's engine of improbable fortune. Gumbo leads the litany; it leads here too.

Method
- Simmer the shrimp shells in water 30 minutes for a quick stock; strain.
- Make the roux: whisk oil and flour over medium heat, stirring constantly, until the color of an old penny — 20 patient minutes. Do not walk away; roux holds grudges.
- Stir in the trinity and cook 5 minutes; add garlic and andouille.
- Whisk in the stock, add bay and thyme, and simmer 45 minutes.
- Add the shrimp for the last 5 minutes, until pink and just curled into loose C-shapes; season with cayenne.
- Serve over rice with scallions. Name every other shrimp dish you know while eating.
